
You know when you want something tasty but you don’t feel like making a trip to the grocery store–or cooking, for that matter? Sweet, salty, and a tad spicy, the three-ingredient maple-soy glaze in this month’s Cooking Light is perfect for such an occasion.

Recipe: Seared chicken with maple-soy glaze (Adapted from Cooking Light, March 2008)
Serves one
1 Tbsp maple syrup (can substitute honey)
1 Tbsp low-sodium soy sauce
1/8 tsp crushed red pepper
1 boneless skinless chicken breast
Whisk ingredients together in a small bowl and set aside. Preheat a skillet, coat with cooking spray, and sear chicken breast on both sides, about 4 to 6 minutes on each side or until done and juice runs clear from the middle. Remove from pan and brush with glaze. Serve with rice and steamed broccoli or other vegetable.
Tip: Find a cooking magazine that you like, and subscribe to it. Even if most of the recipes are for four to six people, you will get ideas and inspirations to use in your cooking single endeavors. I prefer Cooking Light because I trust the recipes, and they are quite a bit healthier than many from other magazines or websites.
