Favorite blogs of the day

I’ve become quite a fan of Everybody Likes Sandwiches. Today, blogger Jeannette solved one of my tasks: to find a recipe for pfefferneuse cookies, a German spice cookie. A coworker who reads my blog recently asked me if I knew how to make them. “Unfortunately, no,” I replied, but I promised to find a recipe. Then this morning, it practically fell into my lap when I went down my list of RSS feeds.

Steering away from cookies now, since I’ve had enough to last me through the rest of the year, I stumbled upon Gina’s Weight Watcher’s Recipes, a cute blog with healthy recipes. It caught my eye today because she featured turkey meatballs – something I used to buy at the grocery store in the freezer section and haven’t been able to find lately. They are great for the single cook because you can easily freeze a bunch for several very quick meals later, from traditional spaghetti with meatballs to meatball subs to simple meatballs and vegetables in garlic and olive oil. Thanks, Gina!

In fact, I love to have turkey meatballs with brussels sprouts sprinkled with salt and pepper, and sauteed in olive oil. We Heart Food has a lovely looking recipe for brussels sprouts with pancetta and pine nuts. It’s first on my list for dinner with Gina’s meatballs.

And finally, something simple and sweet from La Fuji Mama: Satsumas, “beautiful little orange globes with a dimply skin that peels away easily, leaving you with small seedless sections of fruit that are bursting with flavor.” Are you salivating yet? I am!

I am Julia, an editor for The Erickson Tribune with a passion for food, photographs, and turning large recipes into single servings. People who live or at least eat alone tend to cook less because most recipes serve four to eight people, not one. And most ingredients are scaled for those recipes, so waste seems inevitable. This blog is my way of bringing easy, delicious, healthy single serving dishes to those who cook for themselves. You don’t have to be a chef; here you’ll find tips and recipes that make cooking for one enjoyable and satisfying. Please send me your requests for recipe makeovers to be featured on my blog. You can post them or send them to julia.boyle@erickson.com Bon appetit!
