Brown bag reinvented, a DIY project!
One of my standby suggestions for single cooks is to pack your lunch as often as possible when you know you’ll be away from home come noon. Making large dishes in the beginning of the week, eating leftovers, or using them to create a new dish are all ways to make the most of your grocery bill and the least of your waistline.
Kate from Design*Sponge, one of my favorite blogs, created a fantastic do-it-yourself project to help motivate herself pack lunch more often–a spruced-up lunch tote:

You never have to waste plastic knives and forks or remember to pack silverware again, because it’s attached to your adorable lunch bag!
This would also be a great gift for children or grandchildren. Better yet, make it with your grandchild, teaching teach him or her to sew and the value of packing lunch.

I am Julia, an editor for The Erickson Tribune with a passion for food, photographs, and turning large recipes into single servings.
People who live or at least eat alone tend to cook less because most recipes serve four to eight people, not one. And most ingredients are scaled for those recipes, so waste seems inevitable. This blog is my way of bringing easy, delicious, healthy single serving dishes to those who cook for themselves. You don’t have to be a chef; here you’ll find tips and recipes that make cooking for one enjoyable and satisfying.
Please send me your requests for recipe makeovers to be featured on my blog. You can post them or send them to julia.boyle@erickson.com
