Thursdays are usually blog day for me, except for one week a month when The Erickson Tribune goes to the printer. It’s a busy day here at the office, so a recipe post will have to wait until tomorrow. To tide you over, though, I’ll direct you to some other great blogs in preparation for tomorrow’s post: Christmas cookies!
1. Cinnamon cookies with pistachio frosting from Baking for the Cure
These dainty little cookies are just beautiful. The bloggers — two siblings from Israel — have a jovial writing style and offer good tips to help their readers turn out a good batch. I’ll definitely be visiting this blog again to see what they come up with next.
2. Ooey gooey coconut bars from At the Baker’s Bench

I am a real sucker for anything coconut, and these look simply irresistible! The blogger gives some great tips for making bar cookies and has step-by-step photos. Add these to your cookie swap, for sure!
3. Eggnog bread pudding cups from Recipes on the Fly
These cute single-sized bread puddings are made with my favorite holiday spirit: eggnog! They’re spiced with cinnamon and cardamom, but I think I would sprinkle some nutmeg in the batter, too, to help bring out that classic eggnog flavor.
4. Orange-laced sugar cookies from spike.bakes

I love the simplicity, ease, and yet ingenuity of these cookies. A classic sugar cookie with an orange zest twist: genius!
5. Chocolate espresso snowcaps from The Kitchen Sink
I couldn’t get out of here without finding a chocolate cookie recipe, and boy, did I find the ultimate one! Not only do these look adorable and wintery, I can only imagine how well the espresso and chocolate compliment each other. These are a must-try.
